I think this would be the place to ask this question. Which fixture for drilling bolt heads for safety wire is considered the “Cadillac” of the industry?

Good question. It used to be addressed in 43.13 to drill bolt heads, but I have never actually seen a jig or block for doing so.
Part 91 might still be ok, but drilled and non drilled are different part numbers for 121 Operations.

Yes, you work in GA long enough, you will see an odd fastener that is metric due to pilot maintenance. NAPA (National Aircraft Parts Association) has great stock....LOL.
I see Diamond aircraft quite a bit, they are metric. Rotax engines are metric as well. Airliners not at all. Business aircraft I would say not but I do not know them well.
